His career began working in Sir Terrance Conrans Butlers Wharf Chop House, he then moved to work for Gordon Ramsey’s Michelin star restaurant at the Connaught hotel, Mayfair. In early 2007 he became the manager at Greig’s Steakhouse in Berkeley Square, Mayfair and then became the General Manager at the Zebrano Group, Carnarby Street before linking up with Richard to set up the 28°-50° restaurants and now the new Stablehand.

Eimaer Doherty

Eimaer grew up in Dublin, Ireland before relocating to London in 2022 to study towards her Master’s in audiovisual translation. Alongside her degree, she worked as a part-time host for the 28°-50° restaurant group, eventually becoming Duty Manager. Now as Restaurant Manager for The Stablehand, Eimaer makes full use of her ample retail and hospitality experience and is dedicated to ensuring that the restaurant and staff create the perfect atmosphere and give the greatest possible experience to all our customers. She has previously worked abroad teaching English and speaks fluent Spanish and French, providing an extra level of service for many of our international guests.

Lucy
Restaurant Chef
Lucy has been a qualified chef for fourteen years and with nine years as a Head Chef under her belt, she is no stranger to a fast-paced kitchen. Cooking has been her passion ever since she attended a cookery school at twelve years old and realised that her dream career was to become a chef. Lucy is classically trained and has a wealth of experience in fine dining establishments, such as the renowned Claridge’s under Gordon Ramsay. Yet her heart lies with traditional British pub food, and she specialises in our wonderful native cuisine. In fact, our hugely popular chicken pie is Lucy’s own recipe, and remains her favourite dish on the menu.
